Only Shallows Viognier 2022

A deeply skin-contact Viognier inspired by music and crafted from sustainably farmed vines in Macclesfield in the Adelaide Hills. The grapes ferment naturally and remain on skins for 99 days before pressing and aging in neutral oak. Bottled without fining or filtration, the wine combines intensity with delicacy, reflecting both the aromatic nature of Viognier and the producer’s experimental style.
